Family-Style Cobb Salad

I love a great Cobb salad – the crunchy, soft, cold, salty combination of healthy food and various toppings that make it not-quite-so-good-for-you!  It’s a great idea for a summer dinner or on a buffet, especially this version.  Made in a big bowl or on a platter, it’s a beautiful display of color, flavor and texture.  The recipe below will easily feed four adults for dinner or 8 or more as a buffet side.

FAMILY-STYLE COBB SALAD

Ingredients

  • 1 Head Iceberg Lettuce, Chopped
  • 2 Medium Tomatoes
  • 6 Chicken Tenderloins, Grilled
  • 8 Strips Crisp Bacon
  • 1 Avocado, Chopped
  • 1/4 Cup Finely Diced Red Onion
  • 2 Hard Boiled Eggs, Chopped
  • 6 Ounces Blue Cheese Crumbles

Instructions

  • On a large chilled platter, arrange chopped lettuce in a even layer.
  • Seed and dice tomatoes and arrange together on lettuce.  You can choose to arrange ingredients in groups, stripes, pie shapes or whatever you think looks prettiest.  It’s best to keep them together rather than mix them up though so they keep their texture until serving.
  • Dice grilled chicken and place on the lettuce.  Don’t forget to season your chicken before grilling!
  • Crumble the bacon and arrange on lettuce.  Do the same with avocado.
  • Arrange onion on lettuce.  Be sure that it is finely diced to provide just the right amount of bite in contrast to the richness of the avocado, blue cheese and egg.  Don’t leave it out!
  • Finally, finish by arranging the egg and blue cheese to complete your salad.
  • Place in refrigerator for up to 2 hours or serve immediately.

While this hardly requires anything else, serve it with your favorite salad dressing.  My wife likes ranch, but I enjoy the contract of a vinaigrette or Russian dressing as well.  Don’t like one or more of the ingredients?  Lots of substitutes work well – cubed ham, sweet peas, cheddar cheese, etc.  Just keep in mind the combination of flavor and texture and change out like-for-like.  Add a crusty loaf of bread and crisp white wine and you have a beautiful summer dinner.  Dig in!

Sale & Pepe – London

For beautiful classic Italian fare in the heart of London’s shopping district, be sure to make your reservation at Sale & Pepe.  Among one of our busier days touring the city, we made a late reservation for dinner at this highly-rated eatery.  Tightly packed and slightly up upscale, the restaurant has a lovely interior decor with small tables and a lively atmosphere.  The maitre de was especially entertaining and made every person that walked through the door feel special and part of the family.  We were immediately thrilled to be there!

While the seating is tight and service a bit slow, we enjoyed the atmosphere while we reviewed the menu.  Sipping a great pinot grigio and nibbling on bread, we made selections from the ample menu filled with traditional dishes.  I loved that there were lots of seafood options to take advantage of the local bounty!  We started with a few basic salads and a very fresh melon and prosciutto starter.  All of them were well-prepared with as much local produce available.

We made our way to our mains where everything was equally as tasty.  The veal ravioli with fresh marinara we rich and decadent, but not heavy.  The linguini and clams was beautiful and a great rendition of the classic.  I opted for the mixed seafood grill which was a top-notch preparation of langoustine, scallops, fish and squid.

There was no doubt we were ordering cappuccino and dessert to round out our evening! 386 – Palm Coast, FL

Nestled along the A1A on Florida’s northeast coast is a little hidden restaurant gem, at least to those that aren’t local, called 386.  Self-billed as “a fusion of fine dining”, you would never suspect the inventive and delicious menu that’s served inside the charming ramshackle building.  Having a reservation proved to be a wise move as it was packed on Friday night!  We walked through the gravel parking lot into the small rundown building unaware of the fantastic experience we were about to have.

Inside the door you are greeted by a lively crowded bar and then moved to a comfy dining room to the left.  Seating isn’t cramped, but they definitely pack in the people into their little spot.  We ordered wine and craft beer from an ample list and listened to a long selection of chef’s specials for the night.  How could we pass up the warm brie with brown sugar and balsamic served with parmesan crisps??  It was warm rich and creamy, without being overly sweet.  While the crisps were good, I thought the brie was much better on the warm bread they served as well.  We had a selection of salads next – the garden, the wedge and also the roasted beet special.  Red and golden beets with walnuts, goat cheese and vinaigrette tuned out to be a perfect choice!  Although my pet peeve is that it was served on a black plate – why mask those beautiful colors?!  I can tell you that I haven’t had better elsewhere though.

The menu has a ton of options from small plates to entrees and everything we saw coming out of the kitchen looked scrumptious.  Our table had a good sampling of entrees – Kansas City pork chop, herbed lamb chops, grilled ribeye and parmesan-crusted trout.  The meats were all healthy portions, cooked perfectly and served with simple, but tasty sides (think mom’s starch and veggie).  I ordered the trout, a huge portion crusted with parmesan bread crumbs and sage.  While the sage was a bit heavy, the fish was crisp and perfectly done.  Served with a simple risotto and green beans, it was all topped with a white wine butter sauce.

Dressed up or dressed down, a large group or an intimate dinner, you will love the inventive and well-cooked food at 386.  It’s clear that locals love this place as it was busy throughout the night!  Great service, comfortable surroundings and some of the best food in the area make this a must-visit if you’re in the area on vacation or if you live close by.  Find out more and check out the menu at threeeightsix.com.  Dig in!!
