Buffalo Chicken Dip

Football season is in full swing and we’re constantly making snacks for a Saturday or Sunday game while we cheer on our favorite teams.  And while I love trying new things, it’s sometimes the old standby that makes for the perfect appetizer to watch a winner.  This recipe for Buffalo Chicken Dip is hot and spicy and perfect to feed a crowd.  While I’ve had many variations, this is the one I like most.

BUFFALO CHICKEN DIP

Ingredients

  • 2 8-Ounce Bricks Cream Cheese
  • 1 16-Ounce Bottle Buffalo Wing Sauce
  • 2 12-Ounce Cans White Meat Chicken or 1 1/2 Lbs. Pulled Rotisserie Chicken
  • 1 16-Ounce Bottle Ranch Dressing
  • 1 Tbs. Garlic Powder
  • 2 Cups Cheddar Jack Cheese

Instructions

  • Preheat oven to 350 degrees.
  • In a 13×9 baking dish, spread cream cheese into an even layer.
  • Pour a thin layer of buffalo sauce over the cream cheese to completely cover.  Use your favorite brand here.  You will only need half to three-fourths of the bottle to cover.  Add more or use a hot version for spicier dip.
  • Cover buffalo sauce with a single layer of chicken.  Canned works fine here, but a store-bought rotisserie chicken is even better for more flavor and a mixture of white and dark meat.
  • Pour the entire bottle of ranch dressing over chicken in an even layer.
  • Sprinkle ranch dressing with garlic powder.
  • Top with cheese and bake for 30-40 minutes uncovered until cheese is melted and it’s bubbling on the sides.
  • Serve immediately with tortilla chips, Fritos and/or celery sticks for dipping.

Yes, that’s all there is to it.  And it’s easy to change it up with different flavors of buffalo dip or blue cheese dressing instead of ranch.  Tailgating, on the sofa or by the pool, you’ll make this again and again for the big game – or even the not-so-important game.  It’s just that good.  Dig in!

Tangy Blue Cheese Dip

Prepping for more holiday festivities I decided to make a new dip to go with some fantastic spicy buffalo ranch nacho chips we found at the supermarket.  And what better accompaniment to spicy buffalo than blue cheese?  This creamy rich recipe provides the right combo of cool and tanginess that’ll keep you dipping all night long!

TANGY BLUE CHEESE DIP

Ingredients

  • 8 Ounces Cream Cheese, Softened
  • 1/2 Cup Miracle Whip
  • 4 Ounces Blue Cheese Crumbles
  • 1 Tsp. Lemon Juice
  • 1 Tsp. Worcestershire Sauce
  • 1 Tsp. Celery Seed
  • 1/2 Tsp. Salt

Instructions

  • In a medium mixing bowl, stir together softened cream cheese, Miracle Whip and lemon juice until smooth.
  • Add Worcestershire, celery seed and salt and stir to combine.
  • Fold in blue cheese crumbles and transfer to a serving bowl.
  • Refrigerate for 4 hours before serving.  Serve with chips, vegetables or chicken wings.

Try finding Paqui Chips in your local grocer or super store as the Buffalo Ranch or Grilled Habanero are awesome with this dip!  Corn chips are also great at a crispy dipper.  You can thin this recipe out by adding whole milk until you get your desired consistency – this makes a tasty salad dressing too.  Dig in!

White Pizza Dip

Everyone loves a good hot dip for a party.  Among the buffalo dips and spinach artichoke dips of the world it’s nice to bring something different to a party.  This white pizza dip was introduced to us by our friend Mindy and we’ve been making it ever since!  It’s perfect for a mini crock, but can be doubled for a larger slow cooker and a bigger crowd.  Either way, I know this will quickly become a favorite for you and your friends.

WHITE PIZZA DIP

Ingredients

  • 16 Ounces Sour Cream
  • 8 Ounces Ricotta Cheese
  • 1 Cup Shredded Mozzarella Cheese
  • 1 Packet Garlic & Herb Dry Soup Mix
  • 30-40 Slices Pepperoni
  • 1 Large Loaf Italian Bread

Instructions

  • In a mini slow cooker, mix sour cream, ricotta, mozzarella and soup mix until thoroughly combined.
  • Cut pepperoni slices into quarters or eighth, depending on preference, and mix into sour cream mixture.
  • Plug in cooker and allow to heat for at least two hours, stirring occasionally.
  • Cut bread into bite-size pieces and arrange in a bowl to serve.

White pizza dip is tangy and a little spicy depending on the amount of pepperoni you put in it.  Like a lot of my recipes, you can easily update it with flavors of your choice.  Go with a meatless version and add sautéed mushrooms and green peppers instead.  Try adding 8 ounces of cooked crumbled spicy Italian sausage or even ground beef and diced chopped and seeded tomatoes.  I’d like to hear what you try and what worked well.  I’m sure you’ll quickly find your favorite combination.  Dig in!!

Layered Taco Dip

Who doesn’t love the crunchy-cool combo of taco dip while watching a big game?  I’ve made and eaten a lot of versions in the past, but I do love this cold combination versus a baked one.  It’s perfect for transporting or tailgating as well since you don’t have to worry about keeping it warm.

LAYERED TACO DIP

Ingredients

  • 1 16-Ounce Can Refried Beans
  • 2 Tbs. Water
  • 16 Ounces Sour Cream
  • 1 Envelope Taco Seasoning
  • 3 Green Onions, Chopped
  • 1 1/2 Cups Shredded Sharp Cheddar Cheese
  • 1 1/2 Cups Shredded Lettuce
  • 3 Small Tomatoes, Seeded and Diced
  • 1 Bag Tortilla Chips or Fritos

Instructions

  • In a 13 x 9 baking dish, place refried beans, water and half of the taco seasoning.  Mix well and then spread into an even layer in pan.  The water helps to loosen the beans and make them more “dippable”.
  • Put the remaining taco seasoning into sour cream container and mix well.  Spread in an even layer on top of beans.
  • Sprinkle green onions on sour cream mixture.  Top with lettuce and then finally with diced tomato.
  • Cover and chill in the refrigerator for at least 1 hour prior to serving.
  • Serve with chips for dipping.

This is a popular dish every time we take it somewhere!  I do love using Fritos Scoops with it, but good sturdy restaurant-style tortilla chips are great too.  Once you taste it, you’ll know that anything you put in it is a winner!  Try it for your next tailgate or at your Halloween party this weekend.  Dig in and enjoy!

Pimento Cheese Dip and BLT Dip

Memorial Day Weekend is always a blast whether you’re cooking out at home, sitting by the pool or camping with family – like we are this weekend!  There’s plenty of time to eat healthy all year long, so take the holiday opportunity to dive into these fantastic dips.  They are both fatty, decadent and will absolutely make you a hit at any party you pop in on!

PIMENTO CHEESE DIP

Ingredients

  • 1 Lb Block Sharp Cheddar Cheese
  • 1 Cup Mayonnaise
  • 1 4 Oz Jar Pimentos

Directions

  • Use the largest holes on a box grater and shred cheddar cheese.  DO NOT buy shredded cheese.  The anti-caking agent and shape will not give you the right taste or consistency.
  • In a bowl, mix together shredded cheese, mayonnaise and drained pimentos.
  • This dip tastes best if you let it chill for at least 2 hours.

Serve this dip with your favorite crackers, crusty bread, celery or other veggies.  It is also delicious on top of a burger or as the filling for a grilled cheese!

BLT DIP

Ingredients

  • 2 Lbs Hickory Smoked Bacon
  • 16 Oz Sour Cream
  • 16 Oz Mayonnaise
  • 2 Large Ripe Tomatoes

Directions

  • Dice bacon into small pieces and render until brown and crispy in a non-stick pan.  DO NOT use thick cut bacon here as it doesn’t provide the right consistency.  Cutting the bacon raw and then rendering makes it really easy vs. frying strips and then crumbling.
  • Remove bacon from grease and drain on paper towels.  Allow to cool completely.
  • In a mixing bowl, combine mayonnaise and sour cream.
  • Seed and cut tomatoes into 1/2-inch dice.  Add to mayo mixture.
  • Stir in cooled bacon pieces and allow to chill for 2 hours before serving.

OK, so there’s no lettuce, but BLT is what we’ve always called this dip!  It’s fantastic with Fritos, Triscuits or butter crackers.  Any way you try it, you’ll love it…and your friends/family will love you for bringing it!  Happy Memorial Day all!

Grilled Greek Lamb Chops with Tzatziki

I love finding grilled lamb chops as an appetizer at parties.  You don’t have to be at a party though, they also make an easy dinner!  Some people are intimidated by lamb or aren’t sure how to season and cook it properly.  Using classic Greek flavors is an easy and fool-proof way to make perfect lamb chops every time!  I always pair them with my easy tzatziki recipe – you can use it with the lamb, pitas and veggies to dip in.

GRILLED GREEK LAMB CHOPS

Ingredients

  • 8 Lamb Chops
  • 2 Cloves Garlic, Finely Chopped
  • 1 Tsp Lemon Zest
  • 2 Tbs Fresh Lemon Juice
  • 2 Tbs Extra Virgin Olive Oil
  • 1 Tbs Oregano
  • Salt & Pepper To Taste

Directions

  • Place lamb chops in a 9×9 dish or ziplock bag.
  • Mix remaining ingredients together and pour over lamb chops.
  • Cover or seal to marinate in the refrigerator for a minimum of 4 hours or overnight.
  • Remove lamb chops from refrigerator 30 minutes to 1 hour before cooking.
  • Grill lamb chops over medium heat 3-4 minutes per side for medium doneness.
  • Remove from grill, cover with foil and let rest 10 minutes before serving.

EASY TZATZIKI

Ingredients

  • 1 1/2 Cups Greek Yogurt (don’t go fat-free here, use 2% or full-fat for best results)
  • 1 Tsp Lemon Zest
  • 2 Tbs Fresh Lemon Juice
  • 1 Clove Garlic, Finely Chopped
  • 1/2 Cucumber, Seeded and Diced
  • 2 Tsp Chopped Dill (dried works well here too)
  • Salt & Pepper To Taste

Instructions

  • In a small bowl, mix all ingredients thoroughly.  Don’t over-mix as you want to keep the thick texture of the Greek yogurt.
  • You can eat it immediately, but I love to let it set in the refrigerator to meld the flavors.
  • Use as a dipping sauce for the lamb chops, pitas and vegetables.
